2 weeks to get from Coffs to Eden

Where heading down the east coast in a caravan in October, we have about 2 weeks to get from Coffs to Eden. We would like some recommendations on some nice towns to stop at for 2 or 3 nights along the way to break the trip up. Has anybody got any good recommendations?
