We have to quarantine in our van for 2 weeks with a dog. We also have to be reasonably accessible to COVID swabbing. Any park suggestions would be great. We can free camp but probably water would not last the 14 days.

Tailem Bend on end of Mallee, Dukes & Princes Highways has a couple of spots for "off grid" just a few either Nth or Sth of town, plus good shops and a testing booth set on Nth side.
Yamba on the Sturt Highway would be similar with a low cost camp with some staying limits has the TESTING station.
Not sure about the Tailem Bend area

We manage on 2.5 litres each per day, 3.0 in summer while remote, but we have to not waste water as beyond about 80L in the car we are over our payload.

If you need to get Covid tests, and you are talking about parks in SA probably best to look close to Adelaide, as test facilities are limited in regional areas.
