I remember eating curried sausages when I was a kid but when I tried to find a decent recipe, I decided to come up with my own. It's very easy to make in a skillet:
Ingredients:
12 thick (1.8kg) pork sausages
1 tablespoon vegetable oil
2 medium (300g) brown onions, sliced thinly
1 tablespoons mild curry powder
1 tablespoon of plain flour
1 cup (250ml) beef stock
1 cup (250ml) water
3 - 4 cups of frozen winter vegetables
1 cup (120g) frozen peas
1/2 cup (80g) sultanas
Method:
1. Cook sausages in skillet with the oil. Then remove to a cutting board.
2. Fry the onions until softened
3. Add curry powder and flour and brown off. Then slowly add the beef stock and water stirring to prevent lumps.
4. Add the vegetables and sultanas. Bring to the boil.
5. Cut the sausages into bite size bits and add to the mixture. Then add enough water to just cover the mixture.
6. Simmer until the sauce thickens stirring occasionally.
