7 heaped cups white bread, preferably slightly stale, cut into 2.5cm pieces
1 cup sultanas (optional) Topping
30 g unsalted butter, melted
20 g unsalted butter, melted for brushing post baking
Icing sugar, for dusting
Method
Preheat oven to 180C. Place eggs in a large bowl, whisk briefly. Whisk in milk, thickened cream, butter, sugar, cinnamon and vanilla. Add bread and sultanas, briefly mix, then set aside for 3 minutes to allow egg mixture to soak through bread.
Pour into a 10 cup or 2.5 litre baking dish. ( Optional:Poke in excess sultanas into the mixture a bit). Drizzle over 2 tbsp melted butter. Bake for 20-25 minutes or until golden on top and the inside is set but still slightly wobbly.
Brush with remaining 1 1/2 tbsp melted butter. Dust with icing sugar. Serve immediately, with toppings of choice.
