It's going to be pretty hilly and windy, pretty well whatever way you go - you have to go over the Range. The Oxley is a good road, windy, but a few pulling off spots along the way. We have stayed overnight in a couple of them, they have toilets and shelters, pretty level. At the bottom of the range, almost you come across Ellenborough Reserve, which is a fantastic free camp for a few relaxing days, or into Wauchope - good shopping - the Showgrounds do camping, but you have to ring - only 16 spots.
Someone else may have a better suggestion - enjoy whichever way you go.

If you use the Oxley Hwy through Gilgandra it's actually the longest in time and distance. See this map. My choice would be to go out past the hospital along the Cobora Rd and up through Coolah but I don't mind hills. The only steep climb that way is up the Moomby Range north of Tamworth. The road through Newcastle is actually the quickest.

The Golden Hwy, the New England/Hunter Expressway to Hexam then the Pacific Highway up the coast it maybe be longer but there are no steep climbs and it's a lot better road. Just make sure that you take the exit off the expressway to Hexham otherwise you will end up in either Lake Macquarie or Newcastle.
