Hi. I have no need for many pots/pans, just two is all I carry. Any old second hand SS pot from a recycle type shop but most importantly my much loved Solidteknics cast iron skillet, the one with the love handle. Yes it is heavy but up until now I have never before used such a fantastic pan It can do anything and as a bonus it's impossible to damage it in any way. It's a life time pan. Open fire or usually a gas ring on a very low setting all work well. Easy clean once used a few times with a wipe out with a paper towel all that is needed After use. Highly recommend. Oh check out the Rok coffee maker. No power needed and makes a reasonable coffee
When free camping we use gas (have a 4 burner gas top) and when on electricity we have an induction hotplate/cooker as their is no fixed electric cooktop in our motorhome. We have a small microwave also for when on electricity but I don't use it often. I basically have one saucepan and a deep frypan that can double up as a second saucepan. These are "Flavorstone" brand cookware which I use at home and put in the motorhome when we travel. They come with glass lids which I wrap in bubble wrap and I put the lids and saucepans in a drawstring bag of extra protection. I got mine from Danos Direct but Harvey Norman sell them. There is also other brands. Note: when we got our motorhome a couple years back we decided to use whatever we had already at home and not go out and spend extra money for motorhome only use stuff. I also take a Flavorchef, again we had this before the motorhome. You need electricity for this one. You can use it closed with top and bottom plates on and roast potatoes, carrots etc. or use it open to fry meat, bacon, eggs, make pancakes in etc. Just a note that it is not that deep when it comes to roasting. You can look these up on the internet for further information. We don't cook on open fires, if we did I agree with Chicken strangler and get a cast iron skillet. We have a cheap electric jug and toaster for on electricity and an old 1980's kettle for use on the gas and a couple cheap microwave dishes. Our motorhome doesn't have an oven. Our meals are very basic because of our set up and I'm on holidays too. We don't carry a BBQ but I know a lot of people do. Cheers.
Stainless steel saucepan, BBQ flat plate and the wonderful invention, 12v Lunchbox Oven (which makes anything a slow-cooker can make. Just put food in an oven bag then into the oven).
