Eggy Toast.


This one is a breakfast favorite of ours. An oldie but a goody. There are a few variations of this recipe. Sourdough bread is our preference.

1. Crack 2 eggs in a bowl, add a small amount of milk.

2. Add a little salt & pepper & whisk like you're making an omelet.

3. Drizzle a small amount of olive oil into a frying pan & place over a medium heat.

4. Dip the bread in the mix & soak up the mix like a sponge on both sides.

5. Lift the bread out & let the excess drain off before laying the slice in the frying pan. Cook for 2-3 minutes each side until golden brown.

Fried tomatoes on top are an added bonus if inclined. YUM! smilesmile

Sounds very similar to french toast but very nice DD. Would you really need the oil though?

Love sourdough bread. Nice with vegemite or a good quality conserve too.

Slightly off topic in a way but I had some 36hr soughdough bread cooked in a wood fired oven not that many moons back. Best bread I have tasted.

Another to try DD

Lightly toast some crusty bread, spread,thickly, some mashed avocado and top with a fried egg. Lash it with freshly ground pepper and enjoy

A wrinkle is to chuck a bit of salad dressing and mustard to spice it up a bit.

My version; Spray Olive Oil (spray cans) on both sides of day old bread and toast to golden brown in frypan - top with scrambled or poached eggs.
