Looking around for a dash cam found a couple of units that gave me more options at an acceptable price. I purchased a Mobius camera, around $79 and a fraction bigger than a packet of Tic-Tacs with a host of features that suited me. I didn't want a Dashcam with a screen, I wanted one that would do time lapse, take stills and could be mounted on a crash helmet as well as in the front of the motorhome reasonably discreetly. The Mobius covered all these with extremely good stills & video quality. My brother purchased a SJ4000, virtually identical to the top range GoPro for under $100. It's an excellent camera.

The SJ4000, excellent camera with all the attachments for 1/4 the price of the GoPro.

That's what we used to do, the iPhone did all the things I wanted, dash cam, time lapse, stills and lots more and would have been okay but wanted a camera when on the bike. The iPhone wasn't easy to mount on a helmet. Couldn't justify a GoPro, thought it was just too much money for our limited requirements and a bit too obvious for thieves. But as you suggested, why buy a dash cam when you have an iPhone or Android that does the equivalent or better job.
