Recryovac


I've just bought a whole eyefillet that has been cryovacced (from Woolworths).  I am wondering if I can open  it, cut it into  smaller portions and recryovac it.  If so  can anyone tell me how long I could keep it for?

Great little suckers those machines. I have a Sunbeam one and is good. Yes you can remove from original package but rinse the meat first then slice dry and re vacuum seal as quickly as possible. Freezing is best and will last months but THEY say you can keep for a few weeks just in the fridge but I have never done that.

Thanks Doug.  Great to  hear from you.  Thanks for the info and the welcome.  The guys in W were not at all helpful, wouldn't even tell me what the useby date was on their packaging.

Hi Dot, I buy my meat like that often, but I keep it in the fridge as is for up to 2 mths. ,as long as the vac. is still good! [ important ] then I unwrap slice up re cryovac & freeze most of it, balance leave in fridge slowly workin my way through it... always check the vac.

  I usually buy a porterhouse,from an ''aged'' cow, [ the fat is yellow ] pay about $12 kg. as opposed to maybe $20kg. Treat it as above ,& it is beauddy!!!

Keep it whole in the fridge for as long as possible(till you need it) and then wash and repack as soon as possible the remaining meat and freeze, do not leve in the fridge as it will spool quickly.
Once frozen it will not get better in fact it will go back a bit due to the freezing process.
Best to get the butcher to cut fresh and cryovac in smaller portions ( the small butcher will).
When vacuum packing (cryovac is a brand name realy) make sure you have no air.
If you want to be flash seal with your spices and then you will realy have seasoned meat that is supper tender.

Thanks Brian, the beef turned out well thanks to the advice I received here.
WA was wonderful, the wild flowers did not disappoint. There were 170 whales in the Bight, so plenty to see at the Head of the Bight. The Superpit at Kalgoorlie was astounding, Karijini was interesting, the rock formations fantastic (and much more). Off to France on Friday. Having a ball.
