I think some models of Evakool have a knob type thermostat which might give you some info on whether you can do it on your fridge. they use a similar type of compressor so should be possible

I gues it could be done. heres a circuit of an Evakool & a Ranco VC-1 thermostat & pics of an Evakool 60L I had to repair. The thermostat capillary tube is fed into a small aluminium tube fixed to the evaporator on one side. You would need to be careful as to where you clamped the thermostat capillary to the evaporator (this is how its done to domestic fridges that use a mechanical thermostat.) These are a tough fridge this one was used on the deck of a fishing boat & suffered a lot of corrosion in the electrical wiring.

Give me a few days to look into it. The thermostats are available on Ebay for around $25. This pic is in a domestic fridge & the tube for the thermostat is pop riveted to the Evaporator.
I wouldn't rush in to it as you may find it will be a freezer & not a fridge. As the Evakool 60 is a freezer inside the Evaporator & the other end is used as a fridge with a divider betwean the 2. Its probably safer to use a thermistor. Fairly ambitious project to attempt.
