Prawns and bacon


I used to frequent a restaurant in North Sydney that featured a dish I've never seen anywhere else, either entree size or main. It was school prawns wrapped in a rasher of bacon, served on a bed of rice with a special tomato sauce (something like salsa). I couldn't get enough of the damn things, and always had the dish as a main.

I've tried cooking something similar at home but had a problem shallow pan frying because the toothpick gets in the way of cooking the bacon properly. Then this morning, thinking about the dish for some mysterious reason, I figured deep frying could be the answer. Secure each one with a toothpick, drop them into hot oil, cook for a minute or two, remove from oil, remove toothpick, arrange on bed of rice, add salsa on side of plate, and serve.

Does that sound like the way to go to you?

Sounds delish, I'm going to try it using small kings, and deep fry in a wok, might even try grilling, and a dash of sweet chilli sauce yum!

You can try soaking toothpicks/skewers (they're a bit thicker) in water. Bon appetite!
