How do you cook "crispy skin fish"

I was fishing for Barra on the Ord river earlier this year staying at Hairy Dog Harman's camp. Our last night there he said tonight we'll have crispy skin barra. We did and it was wonderful. I never thought of finding out then.

I like to try it if someone knows or has a recipe.
