After Darryl caught some lovely crabs in Buffalo creek on tuesday he was looking for a great recipe and this is what we used - fantastic result
CHILLI CRAB
INGREDIENTS
4 Green Crabs cleaned pieces and cracked 2 TBSPN Peanut Oil
2 Red Chillis finely chopped/sliced 2 cloves Garlic crushed
1 TBSPN Ginger finely chopped or grated 1 stalk Lemon Grass finely chopped or sliced
¼ cup Tomato sauce or paste ¼ cup Sweet Chilli Sauce
2 TBSPNS Sweet White Wine 2 TBSPNS Sweet Soy or Kecap Manis
1 TBSPN fresh Lime Juice 1 TBSPN Palm Sugar grated
½ bunch Shallots sliced ½ bunch Coriander leaves
METHOD
1. Heat oil high heat. Add crab pieces and stir-fry til shell changes colour and meat turns white
2. Add Chilli, Garlic, Ginger, Lemon grass and stir-fry 1 minute
3. Add tomato, sweet chilli sauce, wine, Kecap manis, lime juice and palm sugar. Stir-fry 2 mins or till sauce boils and thickens.
4. Remove from heat and add half the greens and toss
5. Place in bowls, sprinkle with rest of the greens.
6. Serve with steamed rice and or crisp bread roll with butter.
