Ma, this is the 'sticky' Cindy started in response to your suggestion and my email, but something happened to the recipes in the process, so I'll repost our 'Roma's Boiled Chocolate Cake' in here.
Put all the above into a large saucepan and bring slowly to the boil. Stir constantly until boiling as it will easily catch on the bottom.
KEEP ANY EYE ON IT AS IT BOILS OVER VERY QUICKLY
Immediately take off the stove and allow to cool or until just warm as I did.
When chocolate mixture has cooled enough ADD:
1 egg white, beaten until fluffy
½ cup apple sauce
1 cup white SR flour and 1 cup wholemeal SR flour (or 2 cups white SR flour)
MIX WELL
The mixture will start to thicken, and foam just a little, so put straight into a baking paper lined square cake tin (or well-greased and floured) and bake in moderate (180 deg C or 160 deg C fan-forced) oven for about 50 60 minutes or until cooked.
When cold, you can ice this cake, but since it is low fat and low sugar, it can be enjoyed just as it is.

Sticky Date Pudding
Pre heat oven to 180deg C or 160 deg C fan-forced
2 1/2 cups pitted dried dates, chopped 2 cups water 1 tsp bicarb soda 100g reduced fat margarine 3/4 cup Splenda 2 eggs, lightly beaten 1 tsp cinnamon 2 cups SR flour low fat custard to serve
Place dates and water in large saucepan on medium heat. bring to boil. Reduce heat and simmer 2 mins, until dates soften. Remove from heat. Add bicarb soda to date mixture and stir to combine. Add margarine, Splenda, eggs, cinnamon and flour. Mix well until smooth and combined - a stick mixer gives best results. Pour into 20cms rouns tin, baking paper-lined or greased and floured. Bake for 45 - 60minutes until cooked. Turn out on wire rack to cool. Cut into pieces and serve with custard.
What about some gluten free if any one has nice cake or bicky recipe ..Seem to be lot of people out there who cant eat gluten i sure there few of us here too

When I found I was unable to have certain things like fat and sugar, I just cut them out altogether rather than hunt for lowfat, low sugar recipes. I have the occasional treat which I keep for chocolates or Ice cream. So I don't cook or bake that sort of food anymore. Sorry I can't help.
Beat all together, roll into teaspoon size balls place on greased tray, squish lightly with a fork cook for about 10 minutes @ 180 degrees. Cool for a couple of minutes on the tray. Makes about 24 gingernut size bikkies
Thanks Sheba. You know I really thought a low fat, low sugar recipe thread would be a bit of a goer in here, but there's not too many participating . . . yet. Hopefully some more of us will come on board. I'm always looking for ways to cut down on the things that don't really do us much good in quantity, but are ok in moderation.
That's okay Happy Wanderer. Myself? I love cooking, but I know many people either don't need to, don't like to, or don't have to cook. We're all different.
That's a different recipe, Sue, and it sounds really yummy - almost like a kind of meringue, although the recipe is neither low fat nor low sugar. I don't know much about gluten free/dairy free diets though, apart from the fact that wheat products and dairy foods can't be eaten.
I love your suggestion, but I was wondering if you could perhaps ask Cindy for a 'GlutenFree/Dairy Free Recipes' sticky, so as to keep this one purely for Low Fat/Low Sugar? If we start mixing recipes, the thread won't end up being Low Fat/Low Sugar.
Hot or cold, this slice makes a great lunch box filler for kids and adults alike! Ingredients (serves 6) 2 tsp olive oil 150g sliced ham, finely chopped 1 brown onion, finely chopped 6 eggs 1/3 cup (80ml) low fat milk Salt & freshly ground pepper 350g (about 3) zucchini, coarsely grated, excess moisture squeezed 250g (about 2) carrots, coarsely grated 1/3 cup (50g) plain flour Salad, to serve
Method Preheat oven to 200°C. Line an 18cm-square cake pan with non-stick baking paper. Heat the oil in a non-stick frying pan over a medium heat. Add ham and onion, and cook, stirring often, for 8-10 minutes or until soft. Drain on paper towel. Set aside to cool for about 10 minutes. Whisk the eggs and milk together. Season with salt and pepper. Stir in the zucchini, carrot and ham mixture until well combined. Stir in the flour. Spoon into the pan and smooth the surface. Bake for 30-35 minutes or until set and golden brown. Set aside in the pan for 15 minutes before cutting into pieces. Serve with the salad.

Sorry Romy. Been a bit slack looking for books, but finally found one with a couple of Lo-cal Ice-cream Recipes today. I will look for more, just can't promise how soon.
LOW-CAL ICE CREAM. No 1.
1/2 cup Skim Milk Powder. 1 Envelope [10gr. or 3 level teaspoons] Gelatine.
Mix Milk Powder and water. Pour into Saucepan with Honey & Vanilla. Dissolve Gelatine in cold water, and add to warm milk. Stir 'till well mixed. Pour into Freezer Tray, & let stand at room temp.10 mins.
Put into Freezer. Freeze 'till firm. Remove from Tray to Chilled Bowl. Beat 'till smooth. Return to Tray, and Freeze.
Approx. 6 portions.
VARIATIONS :- 1/ Chocolate :- Add2 T'bspoons Choc. Syrup or Cocoa to warm milk before heating.
2/ Carob :- Add 1/4 up Carob Powder.
3/ Fruit Flavours :- After removing mixture from heat, and dissolving Gelatine in warm milk, mix in 1/2 crushed Pineapple, Pureed Berries, Aprocots,Peahes, or other fruit before freezing.

Hey, good on you Popeye and Sheba! Love the sound of those 3. Here is a real winter favourite recipe of ours.
Beef & Vegie Curry
Ingredients 600gm round or topside steak, fat trimmed & cut into cubes 250gm sweet potato (cubed) 250gm Pumpkin (Cubed) Thai Red curry paste to taste (1tsp mild, 2-3tsp med, more than 3tsp HOT to my taste!) 1 Onion Sliced Thinly 2-3 cloves garlic sliced thinly 1 can chopped tomatos Water - approx 1/2 - 1cup Oil Spray 2tsp brown sugar Salt & Pepper to taste
Brown beef in oil spray in batches. Remove from pan & add onion, cook 3min, Add garlic and curry paste, cook 1min. Add beef back to pan, along with chopped tomatos and as much water as it needs to give a decent ammount of 'sauce'. Bring up to a simmer & then place into a 180 degree oven for about 45min, add pumpkin & sweet potato & cook for at least another 30 min. sprinkle over sugar and serve with green vegies.
Can be cooked slower and longer, or in a slow cooker, and this just makes it better.
Ingredients (serves 4) 600g lean beef mince 1 small zucchini, grated 3 green onions, finely chopped 80g cup mushrooms, grated 1 teaspoon dried mixed herbs 2 tablespoons olive oil 1 medium brown onion, chopped 2 garlic cloves, crushed 1 medium red capsicum, chopped 575g jar tomato pasta sauce 1/4 cup chopped fresh basil leaves cooked spaghetti pasta, to serve
Method Combine mince, zucchini, green onion, mushroom and dried herbs in a bowl. Season with salt and pepper. Roll level tablespoons mixture into balls. Place on a plate. Heat 1 tablespoon oil in a large nonstick saucepan over medium-high heat. Cook meatballs in batches, turning, for 5 to 6 minutes or until browned. Transfer to a plate. Heat remaining oil in pan. Add brown onion and garlic. Cook, stirring, for 3 minutes or until onion has softened. Add capsicum. Cook, stirring, for 2 minutes. Add pasta sauce. Bring to the boil. Return meatballs to pan. Reduce heat to low. Simmer, covered, for 20 minutes or until meatballs are cooked through. Stir in basil. Serve meatball mixture with spaghetti.

1 Cup almonds chopped 1 cup raisins 1 cop sultanus or mixed fruit 1 cup dried apricots or dares chopped 3 eggs 5 table spoons milk 5 table spoon wholemeal plain flour
Beat eggs with 3 table spoons milk add to fruit mixture with 5 table spoons wholemeal flour. Mix well spread in slice tin Bake 20 mins 150c cool cut into small slices freezes well
I found dried fruit medley Angas Park brand is a great substitute for any fruit recipes instead of glace' fruit, sultanas or similar. I even cooked ANZAC biscuits with this fruit in them. My kids loved them and they were so good for them. The dried fruit means you can use much less sugar because the fruit has natural sugar.

2 tspn instant coffee 375g packet dates 1 cop boiling water 1 cup selfraising flour 1/4 cup flaked almonds 1/3 cup water (cold)
Add coffee to 1 cup boiling water mix pour over dates and soak over night stir in flour Add 1/3 cup water put in lined loaf pan sprinkle over flaked almonds Boke in a preheated oven 160c for 45 minutes.
