Preparation
This is an exciting Thai popular dish of old, which is still enjoyed everywhere. Lobo offers you a traditional Seasoning Mix to re-capture all the flavour. It is good for baking, frying or charcoal grilling.
Dredge chicken in Seasoning Mix for Chicken and marinate 20 minutes. Heat oil in a pan until hot. Fry marinated chicken until brown. Place fried chicken in a row on a tray for roasting. Add chicken broth, carrots and broccoli. Roast at 350°F or 180°C until cooked. Place cooked noodles on a plate, followed by roasted chicken, carrots and broccoli. Include a small amount of broth derived from the roasting. Sprinkle with fried garlic and stink weed then serve.
Tips
Do not cook chicken too long when frying. You only need the chicken skin to be a bit brown. Chicken will be crispy on the outside and tender on the inside once roasted. To boil vegetables, first add a little bit of salt into the water. Place vegetables into really boiling water and not for too long. Remove from hot water and soak in cold water to relieve heat quickly. This will retain the colour of the vegetables you boil.
