1.5kg piece corned beef 2 tablespoons malt vinegar 6 each black peppercorns and cloves 1/4 cup brown sugar 40g butter 2 tablespoons grated red onion 1/4 cup plain flour 1 cup milk 1/4 cup thickened cream 2 tablespoons chopped fresh herbs (I used parsley and chives)
Method
1. Place beef into a large heavy based pan, add enough water to cover. Then add vinegar, peppercorns, cloves and sugar.
Bring to the boil and simmer, covered for 1.5 hr. Remove from heat, stand for 15 min.
2. In a separate pan, melt the butter and add grated onion, cook for 30 sec, remove from heat and stir in the plain flour. Gradually add milk and whisk until combined. Add cream and stir over medium heat until sauce has thickened. Add herbs and season to taste.
3. Carve meat and serve with mashed potato and seasonal vegetables. Accompany with sauce.
