From what you say I would just use sleeping bags. Even if you put table down it would be a lot easier. I reckon it would get annoying having to make up a bed every night. You want things easy and quick out here in the playground.
If you really want to make it up every night then just a bottom sheet and a good lightweight doona and cover. I have a goose down and feather mix doona and is very light but warm. You will find a sheet only on top in hot climates is enough.

Nothing like a ROOMY sleeping bag, check size before buying otherwise it could be like sleeping in a straight jacket.
You need winter & summer weight alternatives.
I like my sleeping bag which has an easily removed cosy brushed cotton liner, great for winter temps. Take out the liner for warmer weather, or open it up and use it as a sheet/doona in summer.
Looking at your campervan photo, I would say that big cupboard under the seat. Sometimes they come in a plastic zip case, keep that and try to fold it back up small enough to fit it back in.
Or leave the bed made up for a few days at a time and sit outside with table and chairs.
Hi Janet, I am solo female traveller. I have a van with a layout much like yours.
Bedding: I have sheet and doona with a couple of spare throws in case it gets cold.
I also replaced the foam cushion with pieces of foam cut to size from Clark Rubber. I keep the real cushions at home and the are still like new so good sale value.
I ditched the table when I am travelling with my sister. Mine is like that in your picture as well.
We leave the beds made up and use a small folding table inside I have been thinking about looking around for a couple of those "stable tables" they had in the 70's. They might be good for eating off your lap inside.

Of course, a sleeping bag can be opened up and used like a doona as well.
But my thoughts are you are not camping out in a tent, so why not have a few of the comforts of home and when travelling, a good comfy bed is important.
