DOUGWE's PUMPKIN SOUP


I had a nice big, strait from garden Kent Pumpkin given to me so decided to make homemade Pumpkin Soup for the first time ever. 

Didn't follow any recipe. Cut up pumpkin in small chunks, cooked in my Air Fryer. Lightly fried chopped onion and bacon then added to a saucepan with cooked pumpkin. A light grind sea salt and a few good grinds mixed black peppers. Stick blended. Added water for thinning  and a tablespoon Veggeta vege stock, 1 teaspoon curry powder. Let simmer on stove for 30 mins. 

OMG! If I say so myself. Yum! Beats store bought for sure and I tell you that for free.

If you have left overs, blend in some cream on the reheat., double yum.

Made about 3lts of the stuff mate. In the freezer now. I have a big mug full ready for tonight so will do that cream thing then. A nice warm dinner roll with garlic butter and that's my dinner tonight.

Try substituting the cream for some plain greek yogurt. Thats good too. Heart friendly as well. (apparently). Who knows these days with so many vested interests.
