This is the rig I've been eyeing for a while now. What do you reckon would be the total solar power that it could hold?
Forgive my question if it sounds dumb, I'm a total newbie and was wanting to use a rig like this to live off grid but
have an A/C also.

Air conditioner would kill most batteries particularly trying to use solar to keep them charged - I would suggest you buy a good cooling fan. If you really must have air conditioner get a good generator (cheaper than a couple of lithium batteries). I believe that you only need air conditioner a few times a year.
