Touch lights work on a capacitive principle and are very susceptible to external influences - you may have a neighbour operating an Amateur Radio transmitter or perhaps someone with an arc welder nearby - these are the sort of things which will trigger it. There is probably no simple fix for this issue - essentially it's poor design of the light. Removing the lamp whilst the van is at home will fix the problem and is, no doubt, the most simple remedy.

I have a similar problem with the touch LED in the under-bed storage area which randomly turns itself on and then refuses to be turned off. I ended up pulling the fuse which also serves the tunnel boot light, no big deal as I never use either of the lights anyway. I don't trust touch lights, I also have a 240v touch lamp at home that turns itself on at will. One day I will eliminate them and replace with conventional switching.
