We were in Tassie a few years ago (only had 10 days) but found the Tourist info centres happy to provide lots of info, including low cost and free things to do.
So many interesting things there, but don't be fooled into all the expensive stuff. There are a lot of free camps there and also a lot of smaller towns with a lot of history.
Just watch the roads, some are very tight ans squeezy.

We went to Tassie in 2014 for 3 weeks and hired a rental car etc. One thing I loved was the Evandale Penny Farthing races. It's something different you don't see everyday. Looked it up and in 2018 it is on the 24th February. Also loved the Bruny Island jet boat tour. You can go across on the ferry or leave on a tour from the ferry depot or Hobart. If your looking at taking your hire vehicle across check to see if it is covered by insurance whilst on the ferry as most hire companies won't cover you on the ferry. A lot of tourists do take their hire vehicles across and I guess if nothing happens so what but in the unlikely event of ....... . and we liked the West Coast Wilderness Railway trip from Queenstown plus lots of other things. There is lots of beautiful scenery that's free for the looking at. The motor museum at Wynyard have a great display too. Everyone likes different things so what appeals to us my not to you. We don't fish so can't help you there. Enjoy your trip.Cheers.

That means a trip to Brunny Island. If you are into cheese then Ashgrove Cheese for their Wild Wasabi and Wicked Cheese for their Whiskey Chedar.

Bruny Island Cheese (award winning), also now do their own bread and beer.

Just nearby is Get Shucked Oyster Farm, with meals, take-away and great reputation.

There is also the Berry Farm at Adventure Bay. A.B. is the on-island take-off point for the Adventure Cruises.
On the way to A.B. you will pass the fudge/chocolate factory.

On the other side at Alonnah is the pub with good meals. Plus pizza and t/a chips. Special Thursdays with $12 schnitzels.
A bit further on is the Bruny Island Wines, serving excellent meals, including B.I. lamb, game meats.

Shops both at Alonnah and Adv.Bay serving take-aways.

Only place to get fuel on the Island is at Adv. Bay shop.

Scenery and views, beaches to swim/play abound down south.

Up north there is the old Quarrantine Station at weekends, plenty of scenery, a shop and a beach at Dennes Point.

Some Nat. Park campsites down south..
C/van. park at Adv. Bay AND on road to Lighhouse,
Hardware/Landscape supplies at Great Bay and the pub at Alonnah now both taking S.C. rigs o'night.

The road through the Neck is now bitumen. Lookout is being upgraded.

When reading the B.I. Ferry timetable, be sure to read the summer timetable - more services with two ferries. Fares are RETURN for either ferry and same cost.

As for the rest of Tassie, just have fun. You could take six months to see it all. Road distances/times to travel are mis-leading.

History at every turn. Scenery changes every five minutes. Many off-road trails.

Do your home-work as to lines of interest and events on at that time. Bound to be several items of interest for any visitor.
