I have travelled this road without towing a caravan.
My questions is towing a Jayco Heritage 2004 with a Toyota Land cruiser LC200 2013 (v8 Auto) , my questions is there are a couple of 15k turns should this be OK. Travelled from Wauchope to Walcha with a Nissan Patrol manual and did OK.
I think just wait if traffic is coming the other way? I am OK but SWMBO gets a bit panicking.

These sort of question are at the most a bit hard answer, myself having a fair bit of experience over the years driving large transports and need to go where ever has helped, I just go where I want to go, it part of the game, I have have only used this road a hand full of times mostly up from the coast.
Yes Macquarie Pass is a bit steeper, has sharp corners which as you have said need to enter wide and exit, up hill traffic normally has right of way.
My SWMBO is the same I stop and let traffic go where possible, if there is some where to enjoy the view I pull over, try to make the journey interesting as much as possible.
Down though Kangaroo Valley is easier but the bottom bit from Jambaroo to the highway can be bit how you do with a caravan on, windy, rise and then down again.
The Oxley Highway which you have done is one of my favourite drives and you handle that OK, more you do the more confident you get which helps the Lady.
