Most van manufacturers will fit another internal switch in line with the external Suburban switch and the Suburban switch is left on and the 240 volt 

operation is operated by the Internal switch. Usually the original Suburban switch has a Split Pin fitted so that the switch cannot be operated i.e. in the Off position.

But be careful when after travelling then pulling into the van park, because when connecting to Power if for some reason the Hot Water Tank has drained because of a leak you could find that the Element can burn out. That's why it pays too make sure the Power is switched off at the Unit before leaving and also running the Mains Water pressure through the unit before switching the 240 volt Power on. 

I have seen a few Elements damaged by this problem and leaks do occur from time to time. I also will not leave the the Mains Supply turned on when leaving the van for the day for the same reason as I have had a few minor leaks over the 13 yrs of full time caravanning and seen quite a few either Flooded vans or blown water connecting hoses to taps.

I will be looking at a Living Edge van early next year as they look very good.

Have you had any major problems?

Which model did you get?

I am looking at putting an instant water hot water system in the van.

Is there any other suggestions what needs to be added as we are looking at free camping most of the time

Thank you in advance as there is not much info on these that i can find.
