Sorry for not getting these on earlier, although I don't seem to have done much the last few days, I am wondering where the time has gone! Anyway here are a couple of savoury snacks you might like to try.
SMOKED SALMON MINI QUICHES
3 sheets frozen puff pastry, thawed
100g sliced smoked salmon, chopped
2 Tblsp chopped dill
2 Tblsp chopped chives
1 1/2 Tblsp spreadable cream cheese
2 eggs
2/3 cup cream
Preheat oven to 190 deg c or 170 deg c fan-forced. Lightly oil two 12 hole round bottomed patty tins. Use a 7cm cutter to cut rounds from the pastry, and line the tins with the pastry rounds.
Divide the salmon, herbs and cream cheese evenly between the pastry shells.
Whisk eggs and cream together, and carefully pour into the shells. Bake for 20 mins, until puffed and golden brown (they will sink on cooling). Lift quiches from tins and then place on a wire rack to cool.
Tip: You can make quiches up to 1 month in advance. Freeze in an airtight container. Reheat from frozen on oven tray in 180 deg c or 160 deg c fan for approx. 15 mins. Cool, then take to picnic in an esky.
Mine: I make up eggs and cream - if no cream, milk - and add anything (ham, bacon, onion etc) for the fillings.
SIMPLE PIZZAS - Good for Happy Hour, had these at Gulargambone Caravan Park - yum!!
Mission Wrap (any flavour) - any type of wrap will do
Sundried tomato pesto, gherkin spread, or basil pesto
Spread pesto onto wrap, cover with grated cheese. Cook in pizza oven or normal oven until cheese melts and base is crunchy. Slice and serve.
