Very very rarely use the oven at home, generally cook roasts etc on the Weber, certainly don't miss it while away.
Can't see why this would change when we are on the road full time, we will definitely want a decent size fridge though.
Everyone is different though.

We are on the road full time but still never use the oven, actually don't cook inside. Then again it depends on your culinary needs.

The last MH I fitted out we decided we didn't need a stove as like everyone has been saying you do all your cooking outside on the BBQ or portable stove....
WRONG.... WRONG.... WRONG....
We struck 7 days of really bad weather last time we traveled in it and we stuck inside with only a small portable gas burner, so as soon as we got home one of the sets of storage drawers came out and a Full stove went in.. the way I see it is if there is room for a 3 or 4 burner cooktop there is room for a full stove..
Ohhh and how could you ever survive without a full fridge...if it was only a small fridge there would be no room for food..
Having an oven in a van creates too much heat. We have a cooktop and a portable oven (Casera) that we place outside when we want to use it. Exceptions in winter when you welcome the heat.
Have to agree with deverall11, have lived in the van with full oven for over 2 years now, and use the oven for storage of pots and pans, do use the gas cooktop mainly for vegies and brekky but use turbo oven and webber set up outside for main cooking, of course the turbo does need power available but we manage just fine, so given the choice I would rather do without oven inside.
A lot will depend on your current activities and habits.
How often do you use your oven at home, Is it the only way you can cook these meals, can you adapt to something else if needed to, how much are you prepared to pay to have these luxuries.
I have a 260ltr 240v fridge but no oven. I cook on an induction stove and use a small portable gas stove $14 and use about 2 cyclinders a year, if needing a second burner.
The induction stove can be moved outside when camping as well as other appliances so depending on your available power there are lots of options.
I carry no gas and bush camp and prefer to carry my weight as batteries and no gas but then my bus was full 240v when I bought it and a good battery solar setup was a lot cheaper than converting to 12v and gas as well as the added hassles of looking for gas and carrying two bottles.
My camping is restricted by my water (fFresh and Black) and food.
When I had a microwave it was used as a storage place and eventually through it out as it was excess weight just taking up space.
