Hi Crackles or mere male. I am wondering why or how you are getting so much moisture so as to be getting mould. Is the mould just regrowing or is it new mould? You need to make sure you are killing mould properly or it will just keep on keeping on. A good mould cleaner/killer should do the job.
WE also are having issues with moisture and mould. However, being in SW WA, during their wet season, we expect as much. (We have been in the area since May this year) We are using two Hippos, one in the bathroom, and one currently in a cupboard. So far, we have not collected any moisture in them, and still fighting the battle of the mould. Using either Exit Mould on non timber, or Mineral Turps of the timber. One cupboard (where we have a Hippo) the mould is regrowing.
I am sure if we could leave the van open for enough hours each day, it would help, but it keeps raining. (We did not have this issue when we travelled through NSW early last year, and were caught in Narrabri floods.
Can anyone suggest any other suggestions...

DUNMOWIN is no longer on the road and still DUNMOWIN!
Living in Brisbane I found the mould build up after all that rain we had at start of 2012 and not long owning a pop top caravan, no under cover storage the pits. I had all ways camped stored all gear away clean and dry, never a problem, this van was becoming never ending job dampness inside from being closed up was horrible until I started to use good old fashion vinigar. No one hard told me about the on going high maintance of keeping the van fresh and clean, the build up of mould around the vinyal was the worst but I seem to have it under control now.
I mix about 50-50 in water. I been told tee tree is good also, just a few drops in water.
From most chain stores @ $1 a litre good old vinegar is hard to go past.
Our poor caravan has been sitting closed up all winter, had lotsa rain, very wet/dewy mornings in the coastal salty air. So far the caravan has stayed dry and clean inside except for a patch in the fridge which obviously I had failed to clean. The awning has been getting mould along the roll-line, and all the seals around the caravan pop-top are covered with mould. Vinegar cleans the awning quite well, have been opening it and drying it about every week, cleaning it about monthly, but cant get the seals around the edge clean. Its a pest cleaning it without getting any usage from it!
Wondering how so much moisture is getting under your sink? Is there a leak? I'm sure you wouldn't store damp dishcloths there. Doesn't seem right.
We had a persistent mould in one of our lockers; it kept recurring, just in one area of about two square feet. I finally had success with oil of cloves, as mentioned by Clare, and not a sign of it for some weeks now, even when we've had high humidity.
(And it smells nice, too!)

I actually found the clove oil in the supermarket, Dunmowin, when I was looking for something else in the general cleaning and mould-killing area. It's in a little spray bottle ready to go.

We spent the entire day wiping down walls and inside cupboards (timber surfaces) with mineral turps, and other surfaces with mould killer. washed curtains (for a change it was a sunny day). Had windows and hatches open all day, which has helped dry out the van a bit. Tomorrow buying some oil of cloves to spray on the problem spots. Will report how we go with this.

I find that the IGA stores often have useful but not-so-common stuff - ColesWorths tend to stock just the mainstream items. Otherwise try a pharmacy, perhaps?

Will be checking out the IGA in Armadale next shop, also looking for Rosewater (for cooking) and I know they have a huge display of international cooking ingredients. Otherwise (for the rosewater) I will be checking one of the many indian grocery stores in the area.
