They are best simmered in water. To the water add the carp, a tea spoon of salt, 2 crushed cloves of garlic, 2 finely sliced carrots, 4 medium diced potatoes and can of diced tomatos. Add a house brick. When the brick is tender, throw the carp away and eat the brick. Cheers, ozjohn.

My first thought, and I don't have many, would be why would you want to eat them when there are so many better tasting fish in the river.
I will say however last year while in the Port Douglas area I was told that carp make one of the best fishing baits for Coral trout. I have not tried it however the source at the tackle shop was quite sure.
I still think the best way to cook them is to poach the fish, then flake it, removing all the bones then mix it up with plenty of herbs and spices and make into fish patties.
I've never eaten carp. I've been told it doesn't taste great. I assume all you people who say it's c**p have tried it. I was once told that trout from muddy waters tasted muddy but this was sorted by a vinegar rinse. What about the same with carp. By the way, as an ex pom and liver/kidney eater would I even have the discerning palate to notice any "ofF"flavours? Andy
I don't know how anyone can even get over the smell of them to even gut them. I have tried swimming them in clean water and feeding them good food for a fortnight, totally illegal, but to use them rather than waste them. Tried pickling, tried raw cooked with lemon/citrus with herbs and spices, baked, simmered in milk, salted and even tried drying them over smoke. The blowflies only laid eggs on the yellow belly, the carp just went rotten.
Dogs love rolling in the dead smelly ones, the owners hate washing the dogs. And the best use
My main use now is to catch 10lb plus carp on 4lb line as training aid for those better catches, like 1 metre plus snapper on Tapley shoals.
And the best use to date is in my raised vegie beds, dig the soil out, layer of carp, layer of straw, put the soil back and water well, leave for six weeks and plant your vegies! Best way to eat carp!
- putting the fish into ice water to 'stop the histamines that are responsible for the bad taste'; and
- cutting out the blood line and surrounding areas.
The system works, from the comments of tasters.
Why isn't immediate bleeding recommended? Because that is what is usually done with fish that can suffer from blood taints and poor keeping. It is humane.
If I had a go, I would probably marinate the fillets in salad dressing and then coat with cajun powder or lemon salt and breadcrumbs before frying in oil.
Never ever wanted to try them, the smell is enough to kill the taste buds from wanting to eat them...I hear they are put into a lot of garden fertilizers .
