Easy Christmas puding


I always make about 10 christmas puddings, have an easy recipe that freezes well. Then can give to friends and enjoy all year. Recipe: makes 2 1kg mixed fruit 3 eggs 1 cup brown sugar 300ml cream 2 1/2 cups plain flour 1 tsp nutmeg 1 tsp bi carb soda Beat eggs and sugar until thick and creamy. Add fruit with cream. Mix well. Add sifted dry ingredients. Mix well. Place into 2, 5 cup pudding steamers with lids and stem in saucepans for 3 hours, or one 10 cup and steam for 5 hours. Optional: When cooked I sprinkle brandy over pudding and stand for 1/2 before turning out. Glenda

Going to try this recipe this week. Don't normally make Christmas Puds or cakes so will give it a go!! thanks for the recipe.
