Pikelets


 

I remember my grandmother cooking the best, lightest, fluffiest pikelets ever, however I do not have her recipe and she has since departed this earthly life.

It got me to thinking and I wondered how many of you out there have some great recipes for making pikelets, possibly handed down through the generations.  If so I hope that you might like to share them with us.

Now please..real recipes, not suggestions that I buy a packet mix or similar.

I have my GREAT Grandmother's recipe for pikelets B.  When I get home I will post it for you.  Never failed me yet but can't be sure of the quantities so better off to wait till I can consult the recipe.

"Martha Gardner"  Pikelets.

Beat until thick            1 Egg

                                   1/4 cup Sugar.

Add                              3/4 cup Milk.

Then add                      1 cup Plain Flour sifted with

                                     pinch Salt

                                     1 teaspoon Baking Powder.

Lastly add                     1 Tab'spn Melted Butter.

Mix until smooth. Cook in spoonfuls on hot greased Griddle or Pan.

Next 2 are from the 29th. CWA Edition Cook Book.

Pikelets. [1]

1 egg.  1/2 cup milk.  2 Tab'spns sugar. pinch salt.  4 Tab'spns SR Flour.

Beat egg well, add sugar, and beat well again. Add flour and milk, and mix well.  Drop in dessertspoons on hot greased pan.   When the bubble, turn. Lift on to a dry cloth and cover.

Pikelets. [2]

1 egg.  about 1 cup milk.  2 Tab'spns Cream.  1 cup SR Flour.  3 Tab'spns Sugar.  Pinch Salt.

Beat the egg well in a cup, add milk to make a full cup.  Add Cream and Sugar, and beat well.  Add the SR Flour with the Salt.  Drop from a Dessertspoon on to a hot greased griddle and bake a light brown on both sides.

 Sheba, have you made any of these yourself and if so can you comment on the particular recipe??

The reason I ask is I am looking for something tried and proven.

Haven't made any of them myself.

Marther Gardner was a Melbourne Radio talk-back show host for around 30 years.  All of her recipes and household hunts were tried and tested by hundreds of listeners, for years.

She was the one who had the Original Wool-Mix Recipe. I got that from her years ago.

Would have thought the CWA ones would be good.   I know their Ice-cream recipes are.

Never tried Martha's picklets, but use her wool wash to bath my dogs in....... they smell great and the fleas hate it.

Here you go, one from each side of the family, both my great grandmother's recipes

#1- paternal side

4 tablespoons self raising flour

2 tablespoons sugar

pinch of salt

1 egg

1/2 cup milk

grated rind of one lemon

juice of half a lemon

Sift flour and salt, add sugar, then lipuids to dry ingredients, beat well and make into a smooth batter.

Drop from a spoon on to a heated and greased hotplate

These are my favourite and have never failed me yet.

 

#2 - maternal side

1 cup self raising flour

1/2  teaspoon of carb soda

1/2 teaspoon of salt

1 egg, well beaten

1 cup sour milk  (ordinary full cream milk with 1 teaspoon of vinegar will do the job)

1 teaspoon melted butter

Sift flour, measure and add soda and salt and sift again

Combine egg and milk and add to flour gradually stirring constantly.

Beat until smooth

Add melted butter

Bake on hot well greased pan
