COWBOY POTATOES


I actually got this simple recipe from an old cattle rancher mate I stayed with, near Porterville, California.
Ray is long gone now but I still enjoy his version of "Cowboy Pa-taters"     

 Done on a campfire in a cast iron pan the first time I had it.  But on the BBQ,   in the oven or stove top is just as good.

Basic ingredients are

Potatoes.          Chopped  to bite sized pieces.  One or two per person.

Onion.
               ChoppedOne large one for four people.

Bacon.               Good fatty piece, or rashers chopped up. 
                          Just whatever available,   Smoked  salty bacon was my favourite.

Oil or Butter.    To grease the pan

Salt Pepper       As required.

I also add a few herbs or anything else that takes my fancy  or is available.
 Like a few peas, bits of chopped cellery,  Garlic,  Basil.  

Ray Longley  was also likely to drop a chile pepper in as well  But that is up to you if you like the Mexican pepper. I prefer this without the chile pepper. 

Cooking.

A frying pan/camp oven with a lid is great for cooking this way

Grease the pan and saute the bacon.  Just to get enough fat to coat all the other ingredients

Add   the potatoes, onion, and herbs season with salt and pepper.

Put the lid on the pan  and cook slowly  till potatoes are cooked and soft to bite.
I usualy add things like peas late on in the cooking.

Great little one pan meal for the family.

With the addition of beaten eggs added at the last minute this will become a beut. Tortilla  (Spanish Potato Omelette)
