Leftovers


Hi

I'm single once again, not by choice, my darling wife had a very short battle with the dreaded C and lost. I'm slowly getting back on my feet and the one of my issues is cooking for one.

Every now and then I get the taste for a good baked dinner, nobody could cook a baked dinner like Jen, but I try my best on the Baby Q.

My problem is what do I do with the left overs. Has anybody out there got  a good receipt for say, a pork stir fry using cooked pork, also lamb and beef. Getting a bit sick of cold pork and salad, pork sandwiches, pork and eggs etc.

Any suggestions would be greatly appreciated!

G'day Hendo. I don't know how you are up for freezer space but when we have leftovers we try and freeze sliced leftovers as full meals or small packs.  When we wish to use just defrost and reheat. Just as good second time around. We find most leftovers can be used in stir frys or curries. Just cook all other ingredients as normal and add the cooked meat at the end to warm through. Hope this helps

Nobody talks about Fritters these days.  When I was a child, they were a good way to use up left-overs. 

Finely diced Pork would go well in these, combined maybe with cooked Peas, Corn, or other Veges you might prefer.

I remember the fritters, we had 6 kiddies in our family and nothing was wasted.

I'm still haunted by my mothers french toast... Have no idea how she made it but it was crispy, salty and very tasty, I think she fried
the bread in real dripping.

 firstly my condolences Hendo, know what ur going thru,

Simple stir fry, veg. Oil. About 1 tbls,  garlic, ginger, onion quartered., stir fry until onion has come apart, throw in red/green capsicum strips, celery chopped, throw in a few tablespoons of plum sauce, or any other one you prefer, stir in your meat. and if you like, a packet of the yellow hoki noodles.  enjoy-Fran

My thoughts are with you Martin, PM if you need a chat mate. Been there too.

Now. When you cook that magnificent roast and make an equally magnificent gravy to go with it, make heaps, put in a dish. Cut all the meat up, eat what you want and place the rest in the gravy, cover, put in fridge. A couple of days later cook some Vege and heat the dish of gravy and meat, yummo.

Another idea is to have cold meat and salad or veg, toasted meat sangas or as my dear mum did, batter the meat and cook then serve with veg or salad.

Thanks to everyone. Some great ideas. Mention of French Toast & Fritters brought back a flood of memories, Like you Cloak I grew up in the country and nothing was wasted, even shoes. My youngest grandson is fascinated by the story of my mum cutting the toes out of our shoes as our feet grew. "Poppy tell me that story again about your shoes."

Like you I also am a single man BUT cooking is far from a problem for me rather it's a pleasure.

Every year for no good reason I make two one hour appointment to chat to a dietitian and have been doing so for about seven years ( I think ) I find the experience very rewarding taking along with me my past weekly meals list. By the way with a referral from a doctor the service is free. I found once I became interested in healthy food and balanced diets then I started to investigate and search out far more food alternatives.

Most people will tell you " I already understand food,labels the balances " but really they don't,not many anyway. 

Just today I have made a gigantic lasagna, portioned up it will be probably six meals. But tonight's dinner is marinating also right now,chicken breast strips. I love my Indian food and once you have the spices are simple. Last night cooked Chinese.

The key is food pasion! Education,and healthy meals. It's a hobby to me Certainly not a chore. 

See a dietitian.

When we have left over silverside I slice some and put meal portion sizes in a freezer bag for lunches and freeze I then keep some aside for corn beef fritters with tomato sauce

Hendo, try this:

For this recipe you can use any cooked meat (pork or chicken)

Mix in a frypan: -
1/8 cup kecap manis or soy sauce
1/8 cup brown sugar
Add a little water to dissolve
Once dissolved, add your meat (cut into bite size pieces)
Mix through & then add 1/4 to 1/2 onion cut into wedges (or preferred cut)
Bring to simmer & make sure meat is heated through (it is already cooked).
To serve add a small amount of lime juice & chilli (both optional).
Serve with your favourite carb (rice/noodles/mash)

Hi Hendo,

I'm new here (never posted before) but am also single and get stuck with leftovers, which my doggie loves! Shepherds Pie is the most obvious reuse of roasts and it doesnt matter what meat you make it with, but there may be something in http://www.taste.com.au/recipes/collections/leftovers that appeals to you
