Pop-top and extended bed ends are pretty popular for holiday vans, many younger families have them.

Again welcome to the forum.
If your van has a 3way fridge & it is on, you can leave it hooked up to the car PROVIDED the van is level. If you have a compressor fridge, that doesn't matter.

Your Eagle slides out both ends. I had one for ten years & my son has just bought one.
My previous reply stands, if you have a 3way fridge, & the van is level, it can be left coupled up to the car, assuming that you're running the fridge off 240v or gas.
