Spent the day today in a tinny doing the rounds of 20 yabby nets. We bagged our 150 each and threw back at least that number again. They are cooked cleaned and ready for the table. Now where is that bottle of thousand island dressing.
Any favourite recipes. keep it simple Phil

Drifters, I was of the opinion that tossing Yabbies back was illegal - perhaps one of the fisher-folk on here could advise on the matter.

Redclaw west of the divide. They are an introduced species.

I chuck in boiling water to blanch them to make it easy to get the flesh out, 30 seconds. Peel them then do what ever you like. My favourite is just butter, garlic and ginger flash fried. Yabbie stir fry. Freeze the bigger ones for half an hour, split them and on the BBQ with a nice herb, lemon and garlic butter!
Best of all, swim them for a week in fresh water, feed on carrots to clear the mud and boil with a bit of salt and malt vinegar. Serve with crusty bread, butter and some lime, lemon, pepper and a good white wine!

Geez, if you have them for a week they all have names, carrotts turn them red as well, but dont use lettuce

I always love eating animals with names, takes the tragedy out of the butchering process, I know where they have come from!

I'm just curious to see if penistail sauce evades the ridiculous "naughty word" software.

Edit: so that's OK then; serve your yabbies with penistail sauce.
