Use a Tuna bake recipe leave out the tuna, put in mushrooms, make your Béchamel using rice, soy or almond milk. I do this often for my nephew's finance' who is vegan when they come to family do's and BBQ's - I have to make a large baking dish of it though as all the "Carnivores" love it.
