Do people fit any type of windscreen protection to deflect flying stones/etc or is it pot-luck.

You don't see many windscreen stone deflectors these days. I don't use one, and they are a pain in the afternoon sun from memory of when I did drive a car with one, many years ago.
Just make sure you have windscreen replacement coverage on your insurance.

Brian Hi, I don't bother with the windscreen & rely on the laminate. Do use a rear window protector though, bought online from Obies Outback in Vic. Some just use beer cartons or Perspex from sign writers etc.

G'day Brian
We're on the wallaby for about 9 months every year and do heaps of good roads & bad roads
I find that I get a few small glass chips every journey, and maybe every 2 - 3 yrs I get a beauty smacking into the glass ... and then I get the windscreen changed
I find the b&^%$#@s who smash windscreens are the 4wd fellas coming towards me, who knowing that their 4wd has super-human road holding abilities swing 2 wheels off the bitumen and they whiz past at 100+km/h - often the tinny boat they are towing is bouncing around wildly also as it is half-off the bitumen too
I on the other hand slow the motorhome down to 40km/h or less and often pull completely off the narrow bitumen road
There was also one time when I was on new roadworks and a B-Double coming towards me, doing the 60km/h of the roadworks, sprayed me with thousands of those tiny bits they put down onto fresh bitumen - and they splattered the windscreen badly
These tiny crushed stuff would also have come thru any metal stone guard if I would have had one in place

Have never used a protector, as previously said have cover to have 1 new windscreen a year if needed.
What I do have, is one of those Perspex Bug Deflectors on the front of the bonnet and am certain it works, do not get nearly as many insects hit the windscreen as without it.

I don't use any windscreen protection and at least once a year I have to replace a front or back window but they have all been on the bitumen usually a truck coming the otherway with 2 wheels on the dirt. I am looking for a good temp window I can chuck on If I am out in the middle of nowhere.
