Thinking about heading north to try my luck with red claw. I was given some a few years back and they were delicious. Have forgotten the process of cooking and keeping the tails. Can anyone help in this regard. I Have boilers, gas ring etc. Also would one have much luck now that it has cooled down in the Qld Tablelands Thanks in anticipation Pres

First, redclaw are harder to locate in the winter months They do hibernate and dig into the mud. I have found deeper water is best, over 6 meters at least.
Many recipes for cooking but i found that smoking them works best for me. Put them on ice or in a freezer until dead or appearing so and then quickly twist off the heads. Take the two inner tail sections and carefully twist them off and draw out the gut tube. Don't worry if it doesn't work though.
I then split the tails lengthwise and hot smoke them in a Jarvis Walker smoker using hickory sawdust.
Or prepare the tails the same way and marinade in a little olive oil and sweet chilli sauce and cook on the Weber Baby Q.
Or boil in hot salty water for about 6-8 minutes
Let cool and remove the meat from the tails. Saute in a pan with garlic and add some creme when heated through.
A touch of lemon completes the feed.

I will give away another secret. I always use a couple of WA Pilchards and a couple of slices of slightly boiled potatoes for bait. I have mad up my own bait holders using a piece of gutter guard (plastic mesh) folded over and bound
The pillys attract them and the potatoes keep them feeding if they strip the fish.
