As an old chef I'd start at the top Rare maybe go to med rare but Blue has been omitted, shame.

Medium rear.. Just pink in the middle.. Cooked too much dries the steak out ..

Meat is safe to eat when cooked "well done". Cattle reared on or near sewerage farms are a risk. The risk being humans eating meat from these cattle will get a dose of tape worms. The so called good cooks will tell you that meat should not be well done, how wrong they are.
Humans with tape worms craping in a paddock where cattle graze will result in cattle being infected with C Bovis which is cysts in the muscles of the animal. When humans eat a viable cyst the life cycle is complete .
After forty years of meat inspection I know the risks.
So if you want a tape worm, eat your meat part or half cooked, best of luck.

Europeans have been eating Ta-Ta, raw mince and egg for yonks without a problem, Me thinks there is too much glass half full these days, problems over-coming the pure joys of eating.

The incidence of Tape worms in Eastern European countries is high, as well as Africa.
Cremated for me , I reckon even the bottom piece was under done !

Then there's the cancer issues.. Of burnt food.. Even toast..
My glass I'd half full .. Cattle are treated for warms these days..

One night we had a spit .. We cut it up .. Everyone was enjoying how well it tasted etc..
Then some fool turned the lights on.. 1/3 of people stopped eating their meat..
Seems more an aesthetic thing ..

C Bovis is not a worm in cattle but is a cyst. eating under cooked meat containing C Bovis cysts will result in a dose of tape worms in your gut. Their is no treatment for this condition in cattle.
