We were there last week. Couple of nights at the Blue Dolphin Holiday Resort $38pn (Top Tourist Park 10%) comes off if you are members. Calypso Holiday Park is right in town and close to beach as well.
Good Bowling club with reasonable priced meals. Don't know if the fish were biting but the mossies were.

fishing haven caravan park just on your way in to yamba on palmers island
also brown rocks caravan park on your way into iluka
We stay regularly in school hols at Sal****er Big4 at Palmers Island with grand child and I know several people that stay outside of tourist time and love the peace and quiet Without all the kids and holiday crowds ... Can usually pick your site ... On par price wise with Yamba parks .... Lots of room and great management - no shops close by except the items sold at the park! situated on the river with boat ramp, short drive to Yamba... A typical Big4 Park.
Someone has has already advised re fishing ... Personally I am not into fish unless it is wrapped in paper or served on a plate!
So the bottom line is, wherever you choose to go, enjoy it
