I know the directions say use an earth, does everyone do this ? what can the consequences be if you don't ?

Those directions DO NOT APPLY IN AUS
"An earth stake is neither required or recommended" In accordance with Australian Electrical codes
That means
Do not deliberately make a connection via an earth stake or any metallic earthed material such as water pipe, steel building etc
