We are away in our old ford and caravan for three months in August,we only have a two burner gas cooker and waeco fridge, what other type of meals could we do other than steak,sausages,pork pieces,mince and veges.

Hi Lawrie, what a lovely rig you have - certain to bring you many new friends who will want to look at it and talk to you.
We have more cooking capacity than you do - a 3 burner gas stove - but no oven.
I do a lot of "one pot meals" where I combine all of the ingredients into a saucepan or larger lidded frypan, which cuts down on space needed, cooking time and washing up.
Examples are:
RISOTTO - I prepare the rice as per the packet instructions (lightly brown in oil,then pour in stock), add diced up vegetables and if using raw meat (chicken, sausages) add that as well, then keep adding stock as needed and stir well until all is tender and cooked.
If using fish, or smoked salmon or pre-cooked meat, I add them in about 10 minutes before the rice & vegies are cooked.
PASTA - same sort of thing, I put the diced vegies, diced chicken or sausages, some small spiral pasta, stock and/or tin of crushed tomatoes (Ardmona rich classic is best) all into a saucepan and let it simmer until ready.
You can also use the "fresh" noodles, such as Wokka Singapore noodles to add to a pot of vegies and meat.

absolutely love the van and vehicle, hope we meet on the road sometime, people who have a rig like that have just got to be a lot of fun!
We cheat a bit with food when we travel, make a lot of curries, sausages in onion gravy, spag bol sauce etc, etc at home before travelling and freeze flat in clip lock bags.
Hubby has sectioned off the Engel with a thick piece of polystyrene wrapped up in one of Aldi's fridge carry bags (cut to size of course) packs the frozen stuff in the bottom of the fridge, sets the polystyrene/fridge carry bag thingy on top then uses the rest of the fridge as a fridge (hope all of that made sense)
then all you have to do is heat up tonight's selection, cook up pasta or rice, make vegies and/or salad to go with it. Its a great way to go if you have been out walking/sight seeing all day and come back to the van tired. We eat a lot of salads and slices of chunky bread on the road, I also take tabouleh and pasta salads when we set off. Frozen flat packs of marinated chopped chicken or chopped steak can be defrosted and made into shaslicks and BBQed with pieces of pineapple, onion, red capsicum and bacon. A sauce made with the pan juices, a good splash of brandy, crushed garlic and a dash of cream will change any ordinary meat dish into something yummy! even buying a cooked chook, shredding it and turning it into a curry with vegies makes for variety in the diet.....gosh I feel hungry just reading all that I have written. I just think up the ideas, hubby does most of the cooking.
I must add that its a lot easier to do with the larger fridge in the new van but I think you get the idea. have fun, cheers Capricorn

great rig - I guess storage for things is a problem. I have a Bessemer pot with a vented lid that cooks lovely roasts on the stove top- it also doubles as a fry pan and is great for stir fries or soups. For gas I use a diffuser as it can be a bit hard to regulate the flame. We also have a single electric hot plate for use when power is available.

What a fantastic rig, safe travels. My wife went and bought a portable stove, good size for indoors cooking she puts its on the sink' and out doors on a little table' it has 2hot plates on the top and of couse an oven' she loves it cooks to the heart content anything you desire will be able to do with it.They cost around $100 although you can pick them up a little cheaper in some places.

I absolutely refuse to have spuds as a side dish with muesli for brekky!
Life wasn't meant to be easy....now, where have I heard that before?
By the way Lawrie, we also make our own muesli and vacuum pack it in large quantities for long trips.

Like everyone else, I'm rapt in your rig. What a beautiful sight! Must turn lots of heads where ever you go. As to food, I'm a one-pot cook much of the time... saves a lot of buggerizing around. And washing up!

Eva Stovern has produced a great little book called the Complete Caravan Chef. this has heaps of different recipes. When my sister came to visit she loved it so much I went and got her one I believe there are two on the market at the moment the older version was on sale for $17 from the RAA in Mount Gambier, I believe it can also be purchased from bookshops or online.

(Alan), If the truth be told it was Doug that lost out when it came to spuds, poor Doug didn't have enough to eat, he was a mere shadow of his former self, it was a terrible situation, I just didn't know what to do and there weren't anymore spuds to feed him because....Pisces had eaten them ALL!
I think we should get Lawrie to send Doug a sample of all these good food ideas we are giving him!

WE have a good non stick frypan with lid. With this can do anything from roasts to whatever. I use the Anne Symes cook books (set of 5) and can do all them just in the pan. Make sure you get one with a heavy base otherwise you will get hot spots that cause things to stick.
