Heat one spud each in their jacket (doesn't matter how, open fire etc etc)
Dice up half a tin of Spam (small cubes) and put into a pan along with half an onion, salt and pepper, teaspoon of curry powder and a dash of soy sauce. Stir fry these ingredients until Spam and onions are starting to turn a little brown.
Open up cooked potato and place the Spam into each spud. Cover the top with grated cheese (or whatever topping you like, sour cream etc) and enjoy!
Simple but VERY tasty!

Whole roast spud - or microwaved, or boiled plus anything is great.
Bologanise sauce and cheese
Leftover roast lamb, pork, beef or chicken plus leftover veges + leftover gravy
Can baked beans + cheese
Tandori chicken + sour cream
Mexican taco sauce and sour cream + salad on top
Shaved ham, chopped pineapple and sour cream
BLT and cheese
......................hungry now

When I was a kid growing up in a family with 5 kids, and on a pretty tight budget most of the time, mum would cook battered slices of spam with a few vegies for dinner at times.
