i always have these pantry ingredients ready in case we cannot get to fresh produce.
1 packet of Dutch Curry and rice soup
1 tin crushed pineapple ( can used diced if you like)
1 425 gm tin of tuna in Springwater, or brine
1 small pack of surprise peas (I just use the home brand type) can use frozen peas if you have them
Add all ingredients to a casserole, add 1 pineapple can of water and stir until combined.
Cook in oven for 40 min, stirring once
OR Cook in the microwave on high for 10 minutes, stir, cook for a further 10 minutes on medium or until the rice is cooked
OR Can be adapted for a thermal cooker.
Serve with other veggies or just bread. Great the next day on toast.
