I had never heard of the biscuits till on the road travelling. Certainly not a Vic Bic. First noticed them in Gilgandra at the road house and now have one everytime I pass through there. They are a bit sickly but worth trying. How far around Aus are they known??
Anyone got any other strange items they don't always know about before getting on the road?

They are two biscuits with a sweet centre (mock cream) joining them together. I saw them advertsied a lot up that way.

This is another site that gives dozens of photos of the variations available. I just read its not actually a mock cream. Will have to go back and find the true filling. Swiss meringue butter cream seems to be the filling. it is very sweet and a struggle for me to eat one.

I know gubby, I nearly asked for a whoopie cushion, had to stop myself.
Theres even pumpkin and chocolate flavour ones. (together) I think they are an american import.

6 tbsp. shortening
1 c. sugar
1 egg
1 c. milk
5 tbsp. cocoa
2 1/4 c. flour
1/2 tsp. baking powder
1 tsp. baking soda
1 tbsp. vanilla
1 tsp. salt
Filling:
1/2 c. shortening
1 1/4 c. confectionerys' sugar
1 tsp. vanilla
1 or 2 tbsp. milk
3/4 c. marshmallow creme
Preparation:
Preheat oven to 350°. Cream together shortening, sugar and cocoa. Add egg, flour, salt, baking soda, vanilla and milk. Drop onto greased baking sheet by teaspoonful. Bake 10 to 12 minutes, until firm. Cool and fill with filling. Cream together shortening and sugar. Add vanilla, marshmallow and enough milk to make a fluffy filling. Beat well and spread on the flat side of one cookie; top with a second cookie. Repeat with remaining cookies and filling. Makes about 2 dozen 2 1/2- to 3-inch sandwich cookies

Treacle might work instead of molasses:
Makes about 30 whoopies
You need:
2 cups of APF (I guess that's sr flour)
1 t baking soda
2 t ground ginger
1 t ground nutmeg
1/4 t nutmeg
1 1/2 stick of butter, room temp.
3/4 cup brown sugar
1/2 cup molasses, use blackstrap if you can.
1 egg, room temp.
1/2 cup sugar, you will use this as a dredge.
1. Preheat oven to 350 degrees.
2. Mix together dry ingredients into bowl, set aside.
3. Cream butter and sugar( except the sugar you will be using for a dredge later) until fluffy and gradually add in molasses and your egg. Beat well.
4. Gradually add in your dry mix until well incorporated.
5. Plastic wrap it and refrigerate at least 4 hours. If you really have your **** together then you can make the dough the night before you want these glorious whoopie pies and refrigerate it overnight.
6. Shape dough into 1 balls and roll in granulated sugar. Place 2 inches apart on parchment lined sheet pan. Put in the oven for 8-10 minutes. Let cool completely before adding your lemon cream
Fo the lemon cream:
1 jar, about 7 oz. Marshmallow cream
1/2 pckg., about 4 oz. cream cheese, room temp.
1/4 cup butter, softened.
1 lemon, juiced and zested.
1. Mix together ingredients until well blended. Place about a T of filling on the flat side of a cookie and top with another cookie.

This has turned into an interesting thread. Would love to have some of the marshmallow fluff. I often buy marshmallows, a bit of chocolate, a few cherries and make up my own rocky road. Some fluff on top would finish it off, wouldn't last long. Still cant beat the favourite, Pavlova covered in whipped cream.
