Add cucumber, green onion, red onion, lemon grass, and red chilies to the beef.
Add in lime juice, fish sauce, salt and pepper to the beef. Mix everything well. Garnish with cilantro and mint.

Thai food are actually very delicious and very healthy as well. It's just that their food are too spicy compare to other Asian dishes but nevertheless their food are good. Now, I will try this and make some salad just like the way you posted the ingredients and ways of preparing their salad.

In case anyone is confused, 'cilantro' is the US name for what we here call coriander.
I have another recipe for the same sort of thing, its really an Australianised version. We have it a lot, in fact I'm doing it for dinner tonight.
Heat 1 tbs oil in a frying pan on high. Cook 2 crushed garlic cloves, 1 sliced red onion and 1 tbs chopped lemongrass for 2 mins until soft. Add 300g beef mince and cook for 4 mins, stirring, until no longer pink. Set aside to cool.
Make dressing: 1 tbs fish sauce, 1 tbs lemon or lime juice, 1/2 tbs sugar, pinch ground chilli or finely chopped red chilli - all in a screw top jar, shake to combine.
Toss mince mixture with 1 lebanese cucumber (halved and sliced on the diagonal), 1 bunch chopped coriander (leaves and stems), 1/2 cup chopped mint, 2 slices chopped fresh pineapple and 1 packet ready-to-eat crunchy noodles. Add dressing and toss gently.
Don't be put off by the fact that the mince isn't hot, it works really well with the crunchy cucumber and noodles and the fresh zingy pineapple.
