we love to cook silverside just like you did but in our DREAM POT - its a thermal cooker nd often there are inexpensive models at Aldi but they are beaut
Just put all into the saucepan - simmer for 30 minutes then into thermal cooker ( no hat or power connected) for 8 hours - cook while you drive
we also love it baked - wash the beef - dry it and coat with smoked paprika,garlic powder and ground pepper
we bake ours wrapped in aluminum foil in our Cobb but its just as easy in the oven - about 2 hrs at 180 c internal temp 75c

Love corned beef in the Dreampot .... So easy and an average size lasts the 2 of us 2 main meals and 2 days sandwiches for lunch or salads.
Definitely parsley sauce to accompany. Have loved this meal all my life.

Must have just missed you two - when we got there just two empty chairs
what else do you cook in the dream pot -
we love casseroles , stews and curried sausages are beaut a well.
